Fresh corn on the cob is easy summer grilling

Corn in the husks or in aluminum foil can be prepared easily in less than 35 minutes.

 

 

It’s that time of year when outdoor grilling makes its debut. May is considered grilling month and over Memorial week the highest volumes of grills are sold.

When considering which meal to prepare on the grill, don't be scared to try out some fun and easy vegetable recipes as well. Fresh corn in the husks will impress your guests and keep the menu light and colorful. Corn in the husks or in aluminum foil can be prepared easily in less than 35 minutes.

Corn Grilled in Aluminum Foil

Pull all the husks off of the corn and discard. Remove silk on the corn and discard. After washing, soak in a pot of cold water for 2 minutes. This provides extra moisture while cooking and generates steam in the foil.

Preheat the grill to a medium temperature (350 degrees). Brush the corncob with olive oil and add a little garlic, chopped onion, nutmeg, salt, and black pepper or cilantro. Tear off squares of aluminum foil and place ears of corn diagonally in the center of each square of aluminum foil. Roll the aluminum foil around each ear of corn and close it by twisting the ends.

Cook for approximately 20 minutes, rotating every 5 minutes. When you press on the kernels and they are tender and juicy on both sides remove. Over cooking makes the corn mushy and the cob will bend easily in your hands. Wear an oven mitten, foil is extremely hot. Once removed from grill, remove foil and add butter.

Preparation for Grilling

If the ears of corn have many layers of husk on them, peel off only the first couple of layers, leaving a few for protection. Soak the cobs in cold water for 15 minutes to provide extra moisture while cooking.

After soaking, begin pulling back the layers of husks without removing them and discard only the silk. Brush kernels with olive oil and season with garlic powder, salt, pepper, nutmeg or cilantro, and chopped onion. Reposition husks.

Grilling the Corn

Place the prepared corn on medium heat, rotating the corn as needed to keep it from getting charred too much on one side. After a couple of turns, place the cornhusk on an indirect heat (moved to the side of the grill) or on the top shelf of your grill, and close the cover.

Allow the corn to slowly continue cooking for approximately 15 minutes. Don’t overcook or it will become mushy.

Because the corn will be hot, carefully peel the husks and silk from the top down. Once you've removed most of the silk, rinse the corn under warm running water to remove any excess ash and silk then add butter and enjoy!
